Bananas are full of potassium and can make for a tasty snack, either alone or with peanut butter or chocolate syrup. It’s not uncommon for bananas to go bad quickly due to oxidation. So, what do you do with those almost-bad bananas?

There are too many sad commercials reminding you that people aren’t eating, so you don’t dare throw them away. You could leave them in your yard to provide nutrients to your garden, but you want to be creative right now. So, you decide you’re going to make something.

You skim the internet for a recipe that includes everything you have in your kitchen. Then, you realize none of these recipes call for things you actually have. You become frustrated and consider throwing them away, but suddenly your artistic ego kicks in and you decide that you’re going to modify some of these recipes and get creative. You’ve got a sweet tooth.

You find a jar of peanut butter. There’s always a jar of peanut butter. You decide that you’re going to make banana-peanut butter frozen yogurt. You take all the bananas, put them in a huge bowl, add a 1/4 cup of sugar, 1/2 a cup of almond milk and loads of peanut butter. You’ll use about half the jar. Because you and your roommate do not have a blender, but do have a mixer, you hesitantly approach your creation with the two-legged tool.

You put the legs of the mixer into the bowl, and you turn that baby on. Bits of banana fly about, and the banana and peanut butter disappear into a thick consistency, a lot like pudding. You’re a genius. You’re making pudding. That’s totally autumn-friendly. You taste for yumminess, and there it is, banana-peanut butter pudding.

You imagine that the pudding will taste even better cold, or even frozen. You decide on putting in the refrigerator. You find a large tupperware container and pour your yummy consistency into it, but not before tasting it one last time. It’s pretty damn good, you think to yourself. And to think, you were going to throw those bananas away.

Do what you will with your pudding. Pair it with wafers or top it with whip cream or cinnamon. Hell, dunk some Oreos into the goodness. Whatever you do, make something and make it yours.
