Beefless Ground Beef Tacos
This healthy taco recipe includes homemade guacamole and pico de gallo with fresh vegetables.
Making the Taco Meat
- Heat olive oil in a pan at medium-high heat. Once the pan and oil are hot, add the ground beef to the pan and cook it until it turns brown.
- Stir in a prepackaged seasoning blend and reduce the heat to medium heat.
- Add 2 sliced bell peppers and 1 yellow onion.
Making the Guacamole
- Mash 2 ripe avocados with a fork until desired consistency.
- Add ½ chopped red onion.
- Add ½ cup chopped cilantro.
- Squeeze in 1 whole lemon.
- Add salt, to taste.
Making the Pico de Gallo
- Add 3-4 diced tomatoes.
- Add ½ red onion.
- Add ½ cup chopped cilantro.
- Squeeze in 1 lime.
- Add salt, to taste.

Beefless Ground Beef Bolognese Sauce
This is a great simple bolognese recipe that is achievable for any Italian food fans out there.
- In a large skillet heat the olive oil, add 1 chopped onion and 2 chopped garlic cloves and saute.
- Add 1 chopped celery stalk, 1 chopped carrot and saute.
- Raise heat to high and add the ground beef. Saute, stir frequently, cook until meat is no longer pink, about 10 minutes.
- Add the 28 ounce can of crushed tomatoes, ¼ cup chopped parsley and 8 fresh basil leaves, cook over medium to low heat until the sauce thickens.
- Season with salt and pepper.
Beefless Ground Beef Stuffed Bell Peppers
The ground beef-bell pepper combo hits different.
- Brown the ground beef in a large fry pan over medium-high heat.
- Add the four chopped mushrooms, 2 stalks of chopped celery, 1 chopped onion and 2 chopped cloves of garlic.
- Stir in the 28 oz can of diced tomatoes with juice with 2 tablespoons of tomato paste.
- Add 2 tablespoons basil, 1 tablespoon oregano and red pepper flakes to taste.
- Season with kosher salt and ground pepper to taste and cook for 15-20 minutes.
- Stir in ½ cup cooked rice and ¼ cup chopped parsley and cook for another 5 minutes.
- Cut off the tops of the peppers and spoon out the ribs and seeds, then rinse.
- Lightly sprinkle the inside of the peppers with kosher salt and place in a microwave-safe dish with 1/4 cup water; cover with plastic wrap and microwave for 5 minutes.
- Transfer to a baking dish and fill the peppers with the hot meat and rice mixture.
- If desired, sprinkle the tops with cheese, then bake for 20 minutes or until peppers are tender and cheese is browned.
