The Connector

Blackened chicken with Brussels sprouts and rice
Serves 2

Ingredients:

2 chicken breasts
2 teaspoons paprika
1 teaspoon cumin
¼ teaspoon cayenne red pepper
1 package frozen Brussels sprouts
1 packet Uncle Ben’s Ready Rice

Directions:

Step 1. Pre-heat oven to 375 degrees.

Step 2. Combine spices and a dash of salt and pepper in a large bowl. Rub chicken with spice mix on both sides until equally covered.

Step 3. Use a medium-sized frying pan with olive oil or non-stick spray and place chicken breasts in it over high heat. Cook for approximately two minutes on each side.

Step 4. Remove from heat and place chicken on non-stick baking sheet on tray, then place in the oven for 10-15 minutes.

Step 5. While chicken is cooking, place Brussels sprouts in boiling water for approximately five minutes. Remove from heat, drain and sprinkle with salt and pepper to taste.

Step 6. Place rice in microwave for 90 seconds and serve with chicken and Brussels sprouts.
